Healthy granola bars

These budget friendly healthy granola bars are a great addition to your meal prep list! Store bought granola bars can be full of hidden fats and sugars so I wanted to create a granola bar with whole ingredients so that we know what is going into our bodies while being on a budget.

Healthy Granola Bars

INGREDIENTS:

2 c quick oats (I like to use Quaker)

1 c puffed rice cereals

1/2 c chopped nut of your choice (I used pecans)

1/4 c hemp seeds

1/2 tsp salt

1/2 c honey

1/3 c nut butter

1/4 c coconut oil

2 ts vanilla extract

OPTIONAL: 1/2 c chocolate chips or raisins

DIRECTIONS:

  1. Preheat the oven to 350 degrees.

  2. Combine all dry ingredients in a bowl and set aside.

  3. In a microwave safe bowl combine all liquid ingredients. Microwave for 30 second increments until everything is melted. Remember to stir in between so that everything is incorporated.

  4. Prep your baking dish by using non stick spray to coat the pan or put a parchment sheet down.

  5. Bake for 15-20 minutes and then let chill on the counter for 30 minutes before cutting.
